The wobbly world of jelly, an edible island of many layers…
PA19 The Performance Arcade, an annual Performance Arts festival that hits the Wellington Waterfront every summer, started with an edible bang this week.
To mark the launch of this great event, CLH Food Design created edible food landscapes of the iconic Matiu / Somes Island. Made from layers of fizzy elderflower jelly and raspberry milk gel, the jelly tingled on the tongue and created a unique fizzy sensation when consumed.



The Jellies were accompanied by an illuminated food presentation by chef Rocco Pierini and lighting designer Marcus Mcshane. — at the New Zealand Portrait Gallery.
